Summer Cocktail Recipes

    The summer is upon us, and although events may not look exactly like you’re used to them looking, that doesn’t mean the cocktails can’t be fabulous. Check out four suggestions for the perfect summer cocktails to batch for your next event - no matter what the size may be. 

    1. Pimm’s Punch

    1 large cucumber, peeled and diced

    1/2 cup [100 g] sugar

    2 large cucumbers, unpeeled and sliced

    1 large orange, sliced

    1 large lemon, sliced

    1 lb [455 g] fresh whole strawberries

    1 bunch fresh mint leaves, rinsed

    One 750-ml bottle Pimm’s No. 1

    2 cups [480 ml] gin

    4 1/2 cups [1 L] soda water or seltzer water

    Ice cubes for serving

    This drink takes a bit of time to make but is 100% worth it, trust me. First 24 hours before your big event you’ll want to add the diced cucumber to a small bowl with your sugar and stir until it’s completely coated. Wrap the bowl in saran wrap and let it sit in the fridge overnight or for up to 8 hours.

    Next, grab your punch bowl or batching container. Combine the sliced cucumber, strawberries, orange, lemon, and half of your mint. Pour in the Pimm’s, gin, and soda water. Lastly, add in your sugar-coated cucumbers and stir until combined. Serve over ice!

    2. Pear Ginger White Sangria

    1 bottle of Riesling

    3 pears, cut into 1-inch cubes

    1 orange, cut into rounds

    1 2-inch long piece of ginger, peeled and thinly sliced

    1/2 cup ginger brandy

    This one is super easy! Combine all of the ingredients in a large batching container, stir until combined, and refrigerate for at least 2 hours - the longer you refrigerate, the better it tastes. Serve over ice when ready.

    3. Pina Colada Punch

    Pineapple slices or rings

    Kiwi slices

    Lime slices

    Orange slices

    Maraschino cherries

    5 cups pineapple juice, chilled

    1 15-oz can cream of coconut (NOT coconut milk)

    2 cups club soda or seltzer water, chilled

    Juice of 2 limes

    2 cups light rum

    Blend the pineapple juice and cream of coconut in a blender until smooth. Pour into your batching container. Mix in the club soda, lime juice, rum, and all of the fruit stirring until everything is well blended. Serve over ice.

    4. Rose all day Punch

    ½ cup blackberries

    ¼ cup raspberries

    ¼ cup strawberry slices

    ? cup vodka

    1 bottle of Rose wine

    3 cans blackberry flavored soda water (I prefer Spindrift®)

    Juice of 1 lime

    2 tbsp. honey

    1 lime sliced

    Another simple one! Combine all ingredients in your batching container and stir to combine. Serve over ice.
